Welsh Cakes
Simple to make, these welsh cakes make a beautiful sweet snack to pair with a cup of tea!
Ingredients:
210g self-raising flour
110g butter
75g sugar
1 egg
zest of 1 small orange
75g sultanas
Method:
Using your fingers, rub together the butter (cut into cubes) and the flour until it resembles breadcrumbs.
Add the remaining ingredients and mix with your hand until it forms a sticky dough
Tip the dough onto a floured work surface and roll out until about 7-8mm thick.
You can now cut the cakes into circles or whatever shape you fancy. Personally, I just cut into squares to avoid having to roll the dough again.
Place the welsh cakes either into a pan or I use my pancake hotplate, cook for about 3 minutes on one side before flipping and doing the same on the other.
One browned remove and enjoy warm with a cuppa!
