Oat Digestive Biscuits

A super yummy take on traditional digestive biscuits, even better topped with chocolate!

Ingredients:

Makes 12 to 15 biscuits, depending on how big you cut them.

  • 100g oats

  • 50g plain flour

  • 50g wholewheat flour - you can substitute with all plain or all wholewheat flour depending on what you have to hand.

  • 75g butter

  • 50g sugar

  • 1 egg

  • Half teaspoon bicarbonate of soda

  • pinch of salt

  • 100g chocolate (milk or dark)

Method:

  1. Blitz the oats in a blender until you have some fine pieces and some chunkier bits left

  2. Mix together all the dry ingredients in a mixing bowl

  3. Add in the butter(cut into small cubes) and use your fingers to rub it into the dry ingredients until it resembles breadcrumbs

  4. Add in the egg and use your hands to bring the mixture together to form a dough

  5. Dust a counter top with flour, and roll out the dough until it is 3-5mm thick.

  6. Next use a cookie cutter (or the top of a glass in our case) to cut the biscuits out. Place them on a sheet or two of baking paper on baking trays.

  7. Bake in the oven for 15-20 minutes until golden.

  8. Allow to cool and if using, begin to melt the chocolate in a bain marie or in short bursts in a microwave.

  9. Carefully coat the top of each biscuit with the chocolate and use a fork to create a little pattern.

When fully cooled and the chocolate has set, enjoy with a cup of tea!
